For his creations, Oscar prefers typical local products and zero miles ingredients; low temperature vacuum cooking to exalt local meats’ tenderness; varied cereals flours to prepare fresh, homemade bread and pasta every day; vegetables grown directly in the hotel’s vegetable garden.

We offer a different starter every night: from the Tyrolese one, with Brenta Speck, to Val di Sole’s typical appetizers including local casolet cheese, or our delicious “tortei de patate” (potatoes mini pies), combined with tasty local cold cuts, and many more surprises.
Then come our scrumptious first courses, among which braised meat mezzelune, barzola cheese gnocchi, or pumpkin, potatoes or porcini mushrooms colourful pureed soups. Our abundant second courses follow: low temperature cooked beef cheeks, veal loin in crust, sheperd’s frittata with casolet cheese and courgettes.
